Non Fried Instant Noodles

The Production Process
Basically the same as the Fried instant noodles production process, the main difference is that the noodle block is made on the extruding technology and hot air drying process.
Distinguished from Fried instant noodles
1) Main ingredients
Almost no difference in the main components of the Fried instant noodles and non fried instant noodles (carbohydrate, protein) content.
2)Moisture content
Fried instant noodles and non fried instant noodles on the moisture and lipid there exists a big difference. Fried instant noodles moisture is under 10%, but non Fried instant noodles moisture under 14.5%, moisture content is more. And on the lipid, Fried instant noodle is approximately 20%, non-fried instant noodles was 4% ~ 5%.
Compared with fried noodles, Fried instant noodles, has the following characteristics: (1) the drying time is longer, the fine organization. (2) in order to shorten the drying time and cooking time, non-fried convenient aspects of line is fine. (3) oil content is less, so close to the dough, have the light taste. These features to use containing fat soup to expand the kinds of taste also made contributions.
Non-fried noodles classification
1) The extruding technology non-fried noodles
Advantages: good face thews, after water saturated fast, strong absorbent noodle can be expandable several times. Can eat directly like Fried instant noodles.
Faults: very high demand for flour, almost reached the powder taht used to make bread, high cost.
2) Hot air drying non fried noodles
Advantages: no deep frying, more healthy. Noodles with organization with fine properties, can have unique flavor and taste.
Disadvantages: Need to soak for a long time, the flavour is insufficient. The dry process needs high cost, production time is longer, process control is more difficult.
